That’s right! It’s not an Oxymoron! You can make chocolate chip cookies healthy and yummy all at the same time. And it’s simple! Remember, that‘s my mantra: simple!

For this recipe, I modified the Nestle Toll House cookie recipe. Here it is:
2 c whole wheat flour1/4 c ground flax seed 1 t baking soda1 t saltI can pumpkin (make sure it’s not the pumpkin pie mix which is loaded with sugar)1/4 c brown sugar2 T Agave1 t vanilla1 T cinnamon2 large eggs2 cups semi-sweet chocolate chips.
Preheat oven to 375. In a small bowl, combine flour, flax, baking soda, and salt. In a large mixing bowl, combine pumpkin, brown sugar, Agave, vanilla and cinnamon. Add eggs. Mix in flour mixture gradually. I find hand mixing keeps them from getting tough. Stir in chocolate chips. Drop onto ungreased baking sheet by the tablespoon. Bake for 11 minutes.
