This blueberry muffin recipe is perfect on a crisp morning. It’s full of whole grains and blueberries which not only add flavor and sweetness, but antioxidants as well.
I adapted this recipe from the Sunny Boy Cereal recipe. Since Sunny Boy cereal can only be bought in Canada, I wanted to try and find something similar. Bob’s Red Mill 8 Grain isn’t a perfect match, but it’s close!
Here’s what you need:
Ingredients
● 1 egg (beaten)
● 3⁄4 cup milk
● 1 banana
● 1⁄2 cup Bob’s Red Mill 8 (or 7 or 10) Grain hot cereal
● 1 1⁄2 cups whole wheat flour (I use Montana Gold from Wheat Montana)
● 1⁄2 cup apple sauce
● 1 1⁄2 tbsp baking powder
● 3⁄4 c blueberries
Preparation
Preheat the oven to 375°C. Soak the Bob’s Red Mill hot cereal in milk for 15 to 20 minutes.
Combine the liquid ingredients (including the banana) in a large bowl. Mix the dry ingredients together in a separate bowl, and then add them to the liquid ingredients. Mix well.
Turn the batter into a greased muffin tin and bake for 25 minutes at 375°F. When baking large muffins, more time may need to be added. Insert a toothpick to determine if they are done. When the toothpick comes out clean, they are finished.
